Have some eggs you need to use up? This is great for brunch, or as Mary suggests, to have on hand for the Eagles game. Feel free to substitute another kind of cheese.
10 eggs ½ cup flour 1 tsp. baking powder ½ tsp. salt 1 pint small curd cottage cheese (2 cups) 1 lb. Monterey or pepper jack cheese, shredded ½ cup butter, melted 2 (4 oz) cans chopped green chilies OR 1 cup diced fresh chilies
Beat the eggs, then add the dry ingredients, cottage cheese and shredded cheese. Add the melted butter and chilies. Pour into a well-greased 13x9 inch baking dish, and bake at 350° for 35 minutes or until center is firm. (Reheats nicely)
