    10. Asian Marinade - Top

    From Marinades by Jim Tarantino.

    ½ cup lime juice
    ¼ cup soy sauce
    2 Tbs. Hoisin sauce
    1 Tbs. Honey or molasses
    1/3 cup Asian or cold-pressed peanut oil
    2 Tbs. Sesame oil
    1-2 star anise, ground or crushed
    1 tsp. five spice powder
    1 – 2 Tbs. Grated fresh ginger root
    3 garlic cloves, minced or pressed
    3-4 Tbs. Chopped fresh cilantro leaves
    1/3 cup chopped scallions, white part removed

    Combine the lime, soy, hoisin, and honey in a nonreactive metal bowl. Whisk in the oils a little at a time. Add the anise, five spice powder, ginger, garlic, cilantro, and scallions. Yields 1 ½ to 2 cups.
