    9. Amber Beer Marinade - Top

    From Marinades by Jim Tarantino

    12 oz. bottle of amber or dark beer or stout
    ½ cup fresh lime juice (3 to 4 medium limes)
    1 to 2 Tbs. Grated lime zest
    ¼ cup dark brown sugar
    ¼ tsp. cayenne pepper
    2 Tbs. Worcestershire

    Combine the beer, lime juice and zest, sugar, cayenne pepper, and Worcestershire in a nonreactive bowl or blender. Yields 2 cups.
