    25. Broccoli with Orange-Sesame Sauce - Top

From Gourmet Meals in Minutes by the Culinary Institute of America
    Vegan

    Serves 8

Note: There is no reason other than presentation to discard the stems of broccoli. You may need to peel off the thickest of the skin, but the stems are like another crispy, sweet vegetable, perfect for slaw recipes.

    2 lbs. broccoli florets
    1 cup orange juice
    2 Tbs. honey
1 Tbs. ginger, peeled and grated
    1 Tbs. lemon juice
    2 tsp. sesame oil
    2 Tbs. sesame seeds, toasted

Place the broccoli in a steamer basket (or a colander) and set in a saucepan over 1 inch of boiling water. Cover tightly and steam until just tender, 3-5 minutes.

To make the sauce, combine the orange juice, honey, and ginger in a small nonstick saucepan and bring to a boil. Cook until the sauce thickens, about 3 minutes. Remove the pan from the heat; stir in the lemon juice and sesame oil, and cook an additional 2 minutes.

Arrange the broccoli in a serving bowl, top with the sauce, sprinkle with the sesame seeds and serve immediately.
