    29. Spinach with Sesame Seed Dressing - Top

    A very simple Japanese way to serve spinach that employs one of the best ways to cook most kinds of greens, which is a very quick blanching. You’ll receive a half pound of spinach in your share, so you may want to adjust the recipe accordingly.

    1 lb. fresh spinach, washed, stems trimmed
    3 Tbs. sesame seeds
    2 Tbs. sugar
    2 ˝ Tbs. soy sauce

    1. Cook the spinach leaves in boiling water until just wilted, about 30 seconds. Rinse under cold running water, drain well, and chop coarsely.

    2. Heat a large heavy skillet over medium-high heat. Add the sesame seeds and cook, shaking the pan constantly, until they are lightly browned. Transfer the seeds to a small bowl or mortar and crush them with a heavy wooden spoon or pestle until finely ground. Add the sugar and continue to grind. Stir in the soy sauce.

    3. Toss the spinach with the dressing in a serving bowl. Serve chilled or at room temperature.

    Serves 2 to 4.
