Vegan Separating the grape pulp from the skins can be a little tedious, but it’s a great activity for kids, and it’s well worth it! (from Erin's family)
1 unbaked 9” pie shell
Filling: 4 cups grapes 1 cup sugar 1/3 tsp. Flour ¼ tsp. salt 1 Tbl. Lemon juice 2 Tbl. Melted butter ¼ tsp. Almond extract
Topping: ½ cup flour ½ cup sugar ¼ cup butter or soy margarine
Skin the grapes by squeezing out the pulp of each grape, separating the pulp and skins into 2 different bowls. Bring the pulp to a boil, and then simmer for 5 minutes. Put the cooked pulp through a sieve to remove the seeds. Return the skins to the pulp and add the remaining filling ingredients – sugar, flour, salt, lemon juice, melted butter, and almond extract.
Pour the filling into the unbaked pie shell. Bake in a 400 degree F oven for 25 minutes. Meanwhile, combine the topping ingredients. Sprinkle the streusel topping over the filling, and bake 15 minutes more. - Updated: January 16, 2007
