    18. Rhubarb Crunch - Top

    6 cups diced rhubarb
    3 Tbl. flour
    1/2 - 1 cup sugar

    Combine rhubarb, flour and sugar and put in glass baking dish.

    Mix together:
    1 cup brown sugar
    1/2 cup flour
    3/4 cup oatmeal
    1/2 cup vegetable oil or butter

    Sprinkle over rhubarb, and bake for 40 minutes at 350 degrees. (Feel free to experiment with other sweeteners such as honey or maple syrup, or to add your favorite nuts to the streusel topping) - Updated: January 16, 2007
