    21. Jewel Cream Cheese Pie - Top

    Serves 6-8

    This is a great dessert that Erin's family makes for the 4th of July, because it’s cooling, and you can make it red, white & blue if you use red berries and blueberries!

    Crust: 2 cups oatmeal
    2/3 cups chopped nuts
    2/3 cups butter, melted
    1/3 cup brown sugar

    Filling:8 oz. package cream cheese
    ½ cup sugar
    1 tablespoon lemon juice
    1 cup heavy cream, whipped

    Topping: 2 cups fresh berries (such as strawberries and/or raspberries)
    ½ cup fresh blueberries
    ¼ cup orange marmalade
    (or can substitute other fruit as desired in place of strawberries/blueberries, such as peaches)

    Crust: Toast oats in 350-degree oven for 5 minutes. Watch closely so do not burn. Combine oats, nuts, butter and brown sugar. Mix well. Reserve 1/3 cup mixture. Press rest of crust into greased 9” deep pie plate. Freeze.

    Filling: Combine softened cream cheese, sugar and lemon juice. Mix until well blended. Fold in whipped cream. Spread mixture evenly into crust. Freeze.

    To serve: Combine fruit and marmalade. Spoon onto top of pie. Refrigerate 20 – 25 minutes so filling thaws and fruit cools. Sprinkle with reserved crumbs.
