    14. Panzanella - Top

    Vegan
    Adapted from www.cooksrecipes.com

    ¾ lb. day-old crusty peasant-style bread, cut into 1” cubes
    2 large tomatoes (about 1 lb.), each cut into 8 wedges
    ¾ cup sliced cucumber
    ½ cup sliced red onion
    ½ cup olive oil
    2 Tbs. Red wine vinegar
    10 fresh basil leaves, shredded

    In a serving bowl, combine all ingredients with salt & pepper to taste. Serves 4 to 6
