    31. Chicken Velvet Soup - Top

    serves 4

    6 Tbs. flour
    6 Tbs. butter
    1/2 cup milk
    1/2 cup cream
    3 cups chicken broth
    1 cup finely chopped cooked chicken
    freshly ground pepper

    In a medium-sized pot, melt butter, then add flour and stir until smooth. Add the milk, cream, and broth, then cook, stirring, until mixture reaches boiling. Reduce the heat and stir in chicken and pepper to taste. Return soup to boiling, then serve. - Updated: March 14, 2005
