Kensington Kitchen Space (KKS)

(AKA Philadelphia Incubation Community Kitchens (PICK))

New to Greensgrow is our incubator kitchen project. As with many Greensgrow projects, it started off with us simply trying to fill a void. For years Greensgrow Farms had been turning out our famous pesto, roasted lemony eggplant dip and cilantro-schirazi hot sauce in the small kitchen of our Firth Street office. As the CSA and Farm Stand grew so did the demand for more and more of our farm made products. So we began hunting for a space to build a kitchen for canning and creating value added products. St Michaels Lutheran Church, located just a few blocks away heard about our search and sought us out.

Corbin in the KitchenTheir kitchen facility was incredibly well cared for by the congregation. Fortunately for Greensgrow it was also underutilized and unfortunately for Greensgrow, it was a bit old and in need of some updates. We agreed to a partnership. We would renovate the space, bring it up to certification level, and upgrade the equipment. In return we would use the kitchen for our own needs and we would open it up to budding food entrepreneurs from the community who were themselves in search of a place to begin or grow their operations. The Kensington Community Kitchen was born.

As word of what we were doing spread, others asked us how they could start something similar in their communities. Ever ones to share-even our "didn't turn out the way we thought it would" ideas- we are developing PICK-a toolbox for both churches or schools that may have their own underutilized outdated facilities and are open to the idea of incubating young trial businesses from their own communities. When completed PICK will offer a step by step workbook for the zoning and certification process and a series of technical and business seminars for the would -be Paula Deens or Jose Vargas. PICK will create incubator kitchens across Philadelphia. A central management team will oversee proper scheduling, maintenance and licensing; thereby keeping costs down and new food-based businesses focused on growing their own business.
