Spicy Steamed Corn Cobs
from ‘The Essential Vegetarian Cookbook’

Note: Bamboo steaming baskets are inexpensive to buy and very handy for steaming vegetables. Try it!

Ingredients:
4 corn cobs
2 inch piece fresh ginger
3 cloves garlic, chopped
1-3 teaspoons chopped fresh red chilies
2 teaspoons green peppercorns, crushed
2 tablespoons water
2 tablespoons fish sauce (optional)

1. Remove the husks and all the silk threads from the corn cobs. In a bowl, place the ginger, garlic, chilies, peppercorns and water; mix well.
2. Roll each cob in the spice mixture and place in a steaming basket, lined with banana leaves or baking paper.
3. Place the basket over a wok or pan of coiling water, cover and steam for 10-20 minutes, or until the corn is tender; drain. Sprinkle fish sauce and serve immediately.
