Registration Required. If you have tasted the bread at La Colombe Fishtown, you will understand why we are so excited about this workshop! John McGrath carefully crafts his recipes and uses high-quality flour (much of it locally milled), natural leavening, and long fermentation, to produces some of the best bread around. In this class we’ll look at making and maintaining a sourdough starter, recipe development, dough fermentation, mixing, shaping, proofing, and baking, all in a way that fits the home baker’s setup.
Everyone will get the chance to mix, portion, and to take home to shape and bake. Participants will have the opportunity to take home some sourdough starter to maintain if they’re interested in baking regularly. You’ll get a recipe and guide handout to help you out.
John has been baking bread for 8 years, including 2 years as Head Baker at Parc and for the past 3 years developing and executing the bread program at La Colombe here in Fishtown.
