Registration Required. Laurie Jenkins, co-owner of Shady Apple Goats in Flourtown, Pa comes to the Greensgrow Community Kitchen. You’ll learn to make simple delicious cheeses perfect for your appetizer tray or to give as a homemade holiday gift.
The class begins with a basic discussion of milk . . . you cannot make good cheese unless you understand some fundamentals of milk! Then goes through the basics of making Chevre; culturing, setting up, draining the curds, preparing the final cheese and some hints for creative flavoring and packaging. We will also learn how to make goat’s milk ricotta and ideas as to how to take these basic cheeses and make other things like chevre truffles, baked chevre, ricotta salads.
Everyone will take home a roll of chevre seasoned with one of many salt options and fresh herbs as well as the recipe for chevre we are making in the class. Also included is a catalog for New England Cheesemaking Supply where class participants can purchase some of the supplies needed to make chevre and and many other cheeses.
